Southwest Chicken Egg Rolls
Southwest Chicken Egg Rolls
Ingredients
- 1 lb cooked chicken diced or shredded
- 1 tbsp Mexican Spice Blend or substitute equal mix of Cumin, Chili Powder, Oregano, Minced Garlic, Paprika
- 2 tbsp cream Cheese
- 1 tsp salt
- 1 green onion sliced
- 1 green peppers diced
- 1/2 cup corn niblets
- 1 tbsp Salsa
- Mexican Cheese Blend shredded (monetrey, cheddar, queso fresco)
- 1 tsp salt
- Egg Roll Wrappers
- vegetable oil
Instructions
- combine all of the ingredients (besides the egg roll wrappers and oil) with 1/4 cup of the cheese blend and mix thoroughly.
- Place about two tbsp of the filling into an egg roll wrapper and fold as instructed.
- Fry for about 3-5 minutes until golden crispy brown.
