Ingredients
  • sesame oil
  • 1/2 cloves garlic sliced
  • 1/2 cup sweetened coconut shredded
  • pinch saffron
  • 3 cup white rice cooked (prepare at least 2 hours in advance & refrigerate- Great for leftover rice)
  • 2 tbsp African Bush Pan-African Blend or equal mix of cumin, turmeric, chili powder, ginger, with a pinch of cloves, cinnamon, allspice and cayenne pepper
  • 1/2 tsp salt
  • lemon juice
  • 1 1/2 cup frozen mixed vegetables corn, carrots, peas, green beans

Instructions
  1. In a deep frying pan, sauté the onion and garlic in about 1 tbsp of sesame oil with a pinch of salt and pepper for about a minute on medium high heat until they become translucent.
  2. Add the coconut and saffron and sauté until it browns a little.
  3. Add the rice, African Bush Pan-African Blend or substitute spices and salt and sauté for another 2- 3 minutes until rice breaks up and separates into individual grains.
  4. Add lemon juice and sauté for another 3 minutes or so.
  5. Add mixed vegetables and sauté for another 3 minutes until the vegetables are defrosted and crisp.
  6. Salt to taste, fluff and serve.
