Ingredients
  • 1/2 tbsp sesame oil
  • 1 tbsp vegetable oil
  • 1/2 onion chopped large
  • 3 cloves garlic sliced
  • 1-2 Serrano peppers (1 or 2 depending on if you want it hotter)
  • 1 -2 cups carrots sliced on the diagonal
  • 1 tomato chopped large
  • baby corn optional
  • 2 tbsp lemongrass sliced thin
  • 1 tbsp African Bush Pan-African Blend or equal mix of cumin, turmeric, chili powder, ginger, with a pinch of cloves, cinnamon, allspice and cayenne pepper
  • 1/2 can Coconut Milk about 3-4 oz.
  • 1/2 cup chicken broth
  • 2-3 lime leaves can find in Asian Dept. of many grocery stores
  • juice of ½ lime
  • 1/2 tsp ginger can use ginger powder
  • 1 tsp salt
  • 1 tsp coconut vinegar can use red wine vinegar if you can’t get coconut
  • 1/2 tsp Worcestershire sauce
  • 1 tsp honey
  • 4 fish filets or steaks (Use a white, meaty fish like mahi mahi, swordfish or cod)
  • 1 cup green beans chopped
  • 1 cup broccoli chopped
  • any other green veggies you would like to add (peas, snow peas, spinach, swiss chard, etc).

Instructions
  1. In a deep, coverable frying pan or wok, sauté onion and garlic in the sesame and vegetable oils on medium high heat for about 2 minutes.
  2. Add the Serrano peppers, carrots, tomatoes, optional baby corn, lemongrass and ½ tbsp of the African Bush Pan African Blend and sauté for an additional 2 minutes.
  3. Add the coconut milk, chicken broth, lime leaves, lime juice and salt and stir. Bring to a simmer and then lower heat to medium low. Cover and simmer for about 15 minutes.
  4. Add the vinegar, Worcestershire and honey, stir and re-cover. Taste and add more salt if needed. Let simmer for another 5 minutes.
  5. Add your fish fillets and cover with the sauce. Then cover the pan again and let braise for about 6 minutes. Add your green vegetables including green beans and broccoli, cover and let simmer an additional 6 minutes until greens are bright and cooked. Serve the fish over the vegetables. Making sure to coat fish with some of the sauce.
