Ingredients
  • 5 slices Italian white bread can use fresh or stale bread
  • olive oil
  • 1 can artichokes sliced
  • 1 Leek medium, sliced
  • 1 zucchini grated
  • salt and pepper
  • juice of ½ lemon
  • 2 tbsp My Leaning Tower Italian Blend or create a blend of equal parts basil, dry minced garlic, parsley flakes with a pinch of red pepper flakes
  • 1/2 cup Parmesan cheese freshly shredded
  • 2 eggs beaten
  • 1 tbsp butter melted

Instructions
  1. Soak the slices of bread in enough water to moisten the bread and not make it too mushy (about ½ cup should work fine) for about 10 minutes or so.
  2. Meanwhile, in a frying pan, sauté the artichokes, leeks and zucchini in olive oil with a dash of salt and pepper for about 5 minutes. Set aside and let cool for about 10 minutes.
  3. Preheat the oven to 350 degrees.
  4. In a bowl, combine soaked bread with the vegetables with lemon juice, 2 Tbsp of My Leaning Tower Italian Blend or mix of substitute spices, parmesan cheese, tsp of salt, eggs, and butter, and mix thoroughly.
  5. Place the mixture evenly in a greased 8X8 baking pan. Place in oven for 45 minutes. Broil for 3-5 minutes to get it crispy.
  6. Let it sit for 15 minutes before serving. Also great if you let it cool completely and heat up before serving.
