Ingredients
  • 8 pieces egg matzo
  • olive oil
  • 1 can artichokes sliced
  • 1 Leek medium sized, sliced (Google how to properly clean and use a leek)
  • 1 zucchini grated
  • salt
  • ground black pepper
  • juice of ½ lemon
  • 2 eggs beaten
  • 1/2 cup Parmesan cheese freshly shredded
  • 1 tbsp butter melted
  • 2 tbsp My Leaning Tower Italian Blend OR create an equal mix of garlic powder, dry minced onion, basil, parsley and a pinch of red pepper flakes

Instructions
  1. Break matzo into chunks and place matzo in a large heat-resistant bowl.
  2. In a frying pan, sauté the artichokes, leeks and zucchini in olive oil with a dash of salt and ground black pepper for about 5 minutes. Then transfer contents of the pan, liquid and all, into the bowl of matzo and cover with tinfoil for about 10 minutes.
  3. Preheat the oven to 350 degrees.
  4. In a bowl, combine soaked matzo with the lemon juice, parmesan cheese, tsp of salt, 1/2 tsp ground black pepper, eggs, and butter,1-2 tbsp of My Leaning Tower Italian Blend (or other 5 spices listed) and mix thoroughly.
  5. Place the mixture evenly in a greased baking pan. Place in oven for 45 minutes. Broil for 3 minutes to crisp.
