Ingredients
  • 3 Yukon Gold potatoes
  • 3 cloves garlic pressed
  • 2 green onions sliced
  • 2 pats butter
  • 3-4 tbsp sour cream
  • 1/4 cup freshly shredded Fontina cheese
  • 1/4 cup Asiago cheese
  • 2 tbsp flour
  • salt
  • pepper
  • breadcrumbs

  • 3-4 tbsp sour cream
  • 1/4 cup freshly shredded Fontina cheese
  • 1/4 cup Asiago cheese
  • 2 tbsp flour
  • salt
  • pepper

Instructions
  1. Bring about two cups of water to a boil. Cut the potatoes in quarters and place in boiling water, and boil until tender to the fork (about 10 minutes). Make sure to keep ¼ cup of potato water and drain the rest. Place potatoes in a bowl with pressed garlic, green onions, sour cream, butter, cheese and begin to mash with a potato masher until everything is incorporated but not totally smooth. Add flour, potato water, salt and pepper (to taste) and mash thoroughly until smooth. Place in a greased baking tray, top with bread crumbs and bake in oven for 30 minutes.
