Ingredients
  • 1/2 lb linguine
  • 1 tbsp olive oil
  • 1/2 onion diced
  • 3 cloves garlic diced
  • 2 Roma tomatoes
  • 2 chicken breasts diced
  • 2 tbsp flour
  • 1 tbsp My Leaning Tower Italian Blend or create an equal mix of dry minced garlic, parsley flakes, dry basil, with a pinch of red pepper flakes
  • 1 cup milk
  • 1 cup tomato sauce see the link to my homemade tomato sauce below
  • salt
  • 1 cup frozen broccoli
  • 1/2 cup frozen peas
  • Parmesan cheese

  • 1/2 cup frozen peas

Instructions
  1. Prepare the linguine halfway through by boiling for about 4.5 minutes and then drain and coat with a little olive oil so it doesn’t stick together and set aside.
  2. Preheat oven to 350 degrees.
  3. In a large (at least-12 inch) cast iron skillet or other large oven safe deep frying pan, sauté onions garlic and tomatoes on medium high for about two minutes with a pinch of salt and ground black pepper.
  4. Add the chicken and sauté for an additional 3 minutes until browned. Add the linguine and sauté for another 1-2 minutes.
  5. Add the linguine and sauté for another 1-2 minutes.
  6. Add the flour and stir to coat pasta, chicken and vegetables.
  7. Add the My Leaning Tower Italian Blend or substitute spices, milk and tomato sauce, and stir carefully so that the flour is incorporated.
  8. Bring the mixture to a slow boil so that starts to thicken. Salt to taste.
  9. Add the broccoli and peas and stir to incorporate. Top with parmesan cheese and place in oven for 15 minutes.
  10. Broil until a little crispy (4-5 minutes).
  11. Let sit for 10 minutes and then serve.
