Ingredients
  • 1/2 lb small pasta orichetti, shells, macaroni, etc.
  • 3-4 cups leftover chili see my chili recipes below
  • 1 1/2 cups shredded Cheddar cheese
  • 1/2 red onion diced
  • sour cream

Instructions
  1. This recipe is for leftover chili, but you can also cook your own first. See the recipes below.
  2. Cook pasta according to directions, drain and place in a bowl.
  3. Preheat oven to 300 degrees
  4. Add the chili and half cup of the cheddar cheese. Mix thorough so that all of the pasta is incorporated and the cheese starts to melt.
  5. Place the mixture into a greased casserole dish and spread evenly. Top with the rest of the cheese.
  6. Place in oven and bake for 15 minutes until cheese has melted. Broil for an additional 3-5 minutes until cheese is golden brown.
  7. Serve with some red onion and sour cream.
