In a coverable pot, sauté bacon and onions in olive oil for about a minute until onions become translucent. Add tomatoes, and a pinch of the Smoky Pole BBQ blend (or pinch of other 4 spices listed), and stir. Cover pot and let sit for about 5 minutes so the tomatoes release their moisture. Add the beans, ketchup, honey, horseradish mustard and 1-2 Tbsp of Smoky Pole BBQ blend (or other 4 spices listed), and mix thoroughly. Cover and let cook for about 45 minutes stirring occasionally. You can also cook in pot for about 20 minutes and then transfer to a 325 degree oven for an additional 25 minutes to get a truer baked bean flavor. Salt to taste.
