Ingredients
  • 2-4 lamb or pork chops depending on how many people
  • salt
  • ground black pepper
  • cumin
  • olive oil
  • 1/2 onion diced
  • 1 Jalapeño pepper diced
  • 3 cloves garlic chopped
  • 2 tomatoes diced
  • 1 mango diced finely
  • 3-5 sprigs cilantro chopped
  • white wine
  • juice of 1/2 lemon

  • 1 mango diced finely
  • 3-5 sprigs cilantro chopped

  • juice of 1/2 lemon

Instructions
  1. Season Lamb or Pork with salt, pepper and cumin and set aside.
  2. Preheat oven to 350 degrees.
  3. In a semi deep, oven safe, frying pan, sauté garlic onions, and jalapeño in enough oil to coat, approximately 2 tbsp, for about a minute. Add pinch of salt and ground black pepper, 1 tbsp of cumin and a few swigs of white wine and sauté for about two more minutes. Add diced tomatoes, mangos, and cilantro and heat for 1 more minute. (Enough time to gently heat the tomatoes and mangos.) Place all of the vegetables and mango in a bowl and set aside. Cover and allow to come to room temperature.
  4. While vegetables are cooling, add a enough olive oil to coat the pan, and bring heat to medium high. When olive oil is heated again, (test to make sure it is thoroughly heated by placing a corner of the chop into the oil. If it sizzles immediately, then it is hot enough) place the lamb or pork into the pan for about 2 minutes per side.
  5. Then place pan with meat directly into the oven for 4-8 minutes depending on thickness. While meat is heating, add lemon juice to salsa and stir. Salt and pepper to taste
