Ingredients
  • 1 lb broccoli frozen, thawed and drained
  • 1/2 onion
  • 2 potatoes
  • 1/2 cup matzo meal
  • 1 egg
  • 1 cup Cheddar cheese
  • 1/2 tsp ground black pepper
  • 1 tsp salt
  • 2 tbsp butter melted

  • 1/2 onion

  • 1/2 cup matzo meal
  • 1 egg
  • 1 cup Cheddar cheese
  • 1/2 tsp ground black pepper
  • 1 tsp salt
  • 2 tbsp butter melted

Instructions
  1. Place the broccoli and onion in a food processor and pulse so that they are finely diced. Set aside.
  2. Using the largest grating size on a “cowbell grater,” shred the potatoes into a strainer. Using paper towels, press the shredded potatoes to release the excess moisture so that most of the moisture is released from the potatoes. Place in a bowl and add the broccoli and onion mixture. Add the matzo meal, egg, cheddar cheese, pepper and salt and mix thoroughly.
  3. Preheat oven to 350 degrees.
  4. Place mixture into a greased baking pan. Brush with melted butter. Put pan in oven and bake for 30 minutes. Broil for 3 minutes until potatoes become crispy. Can serve right away or reheat prior to serving.
