Ingredients
  • 2 tbsp soy sauce
  • 1/4 cup white vinegar
  • 2 tbsp vegetable oil
  • 1 Roma tomato
  • 3 tbsp Jamaican Me Jerky Caribbean Blend or create a blend of an equal mix of thyme, ground black pepper, allspice, paprika and a pinch of cinnamon and cayenne pepper
  • 1/4 cup brown sugar
  • 2 lb pork shoulder

Instructions
  1. In a food processor, combine the soy sauce, vinegar, oil, tomato, Jamaican Me Jerky Caribbean Blend, and brown sugar. Blend into a marinade. Place meat into a coverable plastic container, and pour the marinade onto the pork shoulder and let marinate overnight in the refrigerator
  2. Let the roast come to room temperature by letting it sit covered on counter for about 30-45 minutes.
  3. Preheat oven to 300 degrees.
  4. In a large frying pan, heat vegetable oil and sear meat on all sides.
  5. Place seared meat in baking pan, pour marinade and excess oil from pan on top of meat and cover Place in oven for about 2.5-3 hours.
  6. Remove from oven and let sit for about 15 minutes. Then using a fork, shred the meat. Serve on a toasted bun with some of the sauce from the pan.
Crockpot Instructions

  2. In a large frying pan, heat vegetable oil and sear meat on all sides.
  3. Place seared meat in crockpot, pour marinade and excess oil from pan on top of meat and cover. Set crockpot to medium (4-6 hours) simmer.
  4. Remove from crockpot, place in a large bowl and let sit for about 15 minutes. Then using a fork, shred the meat. Serve on a toasted bun with some of the sauce from the pan.
