  • 2 cups cooked rice can use leftover rice for this casserole as well.
  • 1 potato diced small
  • 3-4 cups leftover chili see my chili recipes below
  • 1 1/2 cups shredded Cheddar cheese

  • 2 cups cooked rice can use leftover rice for this casserole as well.

Instructions
  1. This recipe is for leftover chili, but you can also cook your own first. See the recipes below.
  2. If you haven't cooked the rice, prepare 2 cups of rice as instructed. Place rice in a bowl.
  3. Preheat oven to 300 degrees
  4. Add the chili, potatoes and half cup of the cheddar cheese. Mix thorough so that all of the rice and cheese is incorporated.
  5. Place the mixture into a greased casserole dish and spread evenly. Top with the rest of the cheese and cover.
  6. Place in oven and bake for 20 minutes covered and then uncover and bake for an additional 15 minutes. Broil for 3-5 minutes until cheese is golden brown.
  7. Serve
