Ingredients
  • 2 cups shrimp thawed and detailed frozen
  • 1 cup coconut shredded
  • 2 Jalapeño peppers seeded and finely diced
  • 4 cloves garlic chopped
  • 1/4 cup pineapple crushed
  • salt
  • ground black pepper
  • flour
  • 1 cup sweet and sour sauce
  • 1 tbsp soy sauce

Instructions
  1. In a food processor, combine shrimp, coconut, jalapeño peppers, garlic and pineapple with 1 tsp of salt and ½ tsp of ground black pepper. Add 3 tbsp of flour and blend together until it forms a paste. Wet hands and form small balls (about the size of a Quarter). Lay out flour in a bowl and coat balls on all sides. Set aside.

  3. In a large, deep pot, fill a quarter to a half way up with vegetable oil and heat oil. To test if oil is hot enough, drop a little of the shrimp mixture in. If it starts to bubble around the mixture, then it is hot enough. Place, don’t drop, the balls in the oil and cook for about 3 minutes until golden brown. Remove from oil and place on paper towels to get rid of excess oil.
