Ingredients
  • 2 tbsp butter
  • 3 cloves garlic diced
  • 1 onion diced
  • 2 1/2 tbsp flour
  • 2 cups half and half
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 3 tbsp Dijon mustard
  • 1 1/2 lbs green beans fresh, cut into about 1 inch pieces
  • French fried onions or bread crumbs

Instructions
  1. In a medium pot, melt the butter on medium-high heat. Add the garlic, onions and with a pinch of salt and pepper and sauté for about 2-3 minutes until onions are translucent.
  2. Then lower heat to medium and add the flour and stir. Let the flour begin to clump and thicken in the butter for about a minute more.
  3. Add the half and half, ½ tsp salt, ground black pepper. Raise heat to medium-high and bring to a slow boil to thicken. Once it starts to boil, take off heat and stir until it thickens. Set aside and let cool for about ten minutes. Add the Dijon mustard and stir.
  4. Preheat oven to 350 degrees.
  5. Add the green beans to the creamy Dijon mixture and place the mixture in a greased baking tray. Sprinkle the top with french fried onions or bread crumbs and bake for 45 minutes. Broil until top is golden brown. Take out of oven and let cool for about 10 minutes and serve.
  6. I actually find that if you make it a day ahead, refrigerate it and then reheat it for the big dinner, it turns out even better!
