Ingredients
  • 1 onion sliced long
  • 2 cloves garlic
  • soy sauce
  • red wine or rice vinegar
  • 1/4 cup flour
  • breadcrumbs
  • ground black pepper
  • garlic powder
  • parsley flakes
  • 2 chicken breasts sliced into strips
  • 1 egg
  • spaghetti or linguine
  • 1/4 cup Bok Choy
  • 1/4 cup broccoli
  • 1/4 cup corn frozen
  • chicken broth

Instructions
  1. Mix ¼ cup of flour with ½ tsp ground black pepper, 1 tbsp garlic powder, ¼ cup breadcrumbs and then beat one egg with pinch of pepper and a pinch of parsley flakes in a separate bowl. Set aside.
  2. Preheat oven to 350 degrees.
  3. In a large pot, sauté ¼ onion sliced and ½ clove chopped garlic with enough olive oil to coat. Add pinch of salt and pepper and sauté for 30 seconds. Add 1 tbsp of soy sauce and 1 tbsp of vinegar and mix.
  4. Dip chicken strips into flour mix then egg mix and then dredge in flour again. and place right into pan.
  5. Brown chicken strips on both sides until they are crispy, but do not burn (probably for 1-2 minutes, but watch carefully). Take out the chicken strips and place in a greased baking tray and bake in oven for about 15-20 minutes until they are done.
  6. In the same pot as chicken, sauté the rest of the sliced onion and chopped garlic in about a tsp additional olive oil.
  7. Add 1 tbsp of vinegar and cook for 30 seconds to a minute.
  8. Add can of chicken broth, 2 cups of water, 4 tbsp of soy sauce, 2 tbsp of vinegar, and 1 tsp of pepper. Bring to a boil. Then lower heat and simmer for 5 minutes covered.
  9. Add broccoli, bok choy, and corn and pasta and simmer for 10 minutes.
