Easy Tomato Sauce

Ingredients
  • 1/2 onion diced
  • 4 cloves garlic chopped
  • 5 Roma tomatoes diced
  • 10-15 grape tomatoes halved
  • 1 can tomato paste
  • 1/2 cup wine (red, white or marsala: red makes a sweeter, more traditional sauce, but white or Marsala gives a great unexpected flavor)
  • juice of 1 lemon
  • 1/2 tsp sugar
  • salt
  • ground black pepper
  • My Leaning Tower Italian Blend or create a blend of equal parts basil, dry minced garlic, parsley flakes with a pinch of red pepper flakes.
  • 3 tbsp Parmesan cheese
  • 1/4 cup fresh parsley or parsley flakes diced
  • Optional Vegetables to put into Sauce:
  • Diced Eggplant
  • diced celery
  • diced zucchini
  • diced carrots
  • Diced Mushrooms

Instructions
  1. In a pot, sauté onion and garlic in 1-2 tbsp olive oil with dash salt and pepper on medium high heat for about a minute.
  2. Add roma tomatoes and grape tomatoes, optional vegetables and sauté for another two minutes. Cover and then simmer for an additional 5 minutes on medium heat until tomatoes start to “melt” or break down. I like to mash them a bit at this point so the fibers start to become sauce-like.
  3. Add tomato paste and begin to stir until it becomes “sauce-like.” Add ½ cup of wine, lemon juice (can substitute 3 tbsp of vinegar here) and sugar and stir until everything becomes consistent.
  4. Add salt and pepper to taste, My Leaning Tower Italian Blend or substitute spices and Parmesan cheese and stir. Cover, set heat to medium low and simmer for about 45 minutes to an hour, stirring occasionally. About 10 minutes before finishing, add the parsley or parsley flakes, and stir.
