Ingredients
  • olive oil
  • 3 cloves garlic sliced
  • 1/4 red or Vidallia Onion sliced
  • 1 potato small, diced finely
  • 1/2 eggplant sliced
  • 1 can great Northern white beans drained and rinsed
  • 1 tsp My Leaning Tower Italian Blend or create a blend of equal parts basil, dry minced garlic, parsley flakes with a pinch of red pepper flakes.

  • 1/4 cup breadcrumbs
  • 2 tbsp flour
  • 1/4 cup Parmesan cheese can use prepared grated

Instructions
  1. In a large frying pan, sauté garlic, onions, potato, eggplant, beans, My Leaning Tower Italian Blend, ½ tsp salt and a pinch of ground black pepper for about 10 minutes until vegetables have been softened. Make sure the potatoes are soft, they will take the longest to cook. Take off heat and allow to cool for about 15 minutes.
  2. In a food processor add the cooled sautéed vegetables, breadcrumbs, parmesan cheese and process on high speed for about 30 seconds until everything is incorporated (can be slightly chunky but should be mostly smooth).
  3. Preheat oven to 450 degrees.
  4. Grease a large baking pan or sheet with spray oil (I prefer the olive oil). Wet hands, form the mixture into small balls (about 1-2 inches in diameter- larger will not give as good results) and place onto baking sheet in rows. Spray with spray oil and place into oven for 20 minutes. Take out and carefully turn the balls over, spray olive oil and place back into oven for an additional 10 minutes.
  5. Once balls are done, take out and let cool for 15 minutes. Then place into refrigerator for 1-2 hours.
  6. Reheat the balls before serving by broiling for 2-3 minutes, or place in tomato sauce and simmer for about 10 minutes. Can eat alone or serve on pasta as well.
