Ingredients
  • 5 strips bacon
  • 2 granny smith apples diced into bite sized pieces and placed in water or coated with lemon juice to prevent oxidation
  • sugar
  • 7 eggs
  • milk
  • cinnamon
  • 2 tsp vanilla
  • 10 slices bread
  • 3 tbsp melted butter
  • 1/2 cup Maple syrup
  • Cheddar cheese finely shredded

Instructions
  1. In a large pan, fry up the bacon crispy on medium high heat and then set aside on paper towels.
  2. Drain most of the bacon grease except for about a tbsp, but save it in a small bowl for later use.
  3. Using the same pan , caramelize the apples by pan frying them with a sprinkle of sugar for about 5-10 minutes, flipping and turning occasionally. Remove from pan and set aside on paper towels as well.
  4. Take pan off heat until ready to use again to make the French toast.
  5. Whisk together 2 eggs, ½ cup of milk, pinch of cinnamon, and vanilla.
  6. Replace the pan on medium heat and add another tbsp of bacon grease.
  7. Dip the bread in egg mixture and pan fry each side of the bread for 1-2 minutes per side and then set aside. Repeat until all of the pieces of French toast are completed. Don’t worry if you run out of egg mixture for one or two of the slices, just simply toast them in the pan.
  8. Break the bacon into bits
  9. Preheat oven to 350 Degrees
  10. Whisk together 5 eggs, 2 cups of milk, melted butter, ½ cup maple syrup, another tsp of vanilla.
  11. Break the cooled French toast into large pieces and in a large bowl, combine French toast pieces, apples and bacon and mix thoroughly and evenly.
  12. Grease a large, deep casserole dish with butter. Place the French toast mixture into the dish and pour the milk and egg mixture over and then cover pan.
  13. Let bake for 35 minutes. Uncover, sprinkle cheddar cheese on top and then let continue to bake for another 30 minutes until browned and puffed. Let stand about 5 minutes, then serve.
