Ingredients
  • 2 tbsp olive oil
  • 3 green onions sliced
  • 6-8 brussels sprouts cut into quarters
  • 2 tbsp flour
  • 2 1/2 cups milk
  • 1 cup chicken broth
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 1/2 lb Orecchiette pasta can substitute medium shell pasta as well
  • 1 cup extra sharp white cheddar cheese & parmesan or gruyere shredded- it is important to use the cheddar with another cheese like parmesan or gruyere because they help it "melt" better.
  • 1 lb frozen breaded chicken strips cut into pieces (can make your own fried chicken or use leftover fried chicken if you desire)
  • 2 cups frozen vegetables I preffer peas, carrots, broccoli, cauliflower but choose whichever you like best

Instructions
  1. Preheat oven to 350 degrees.
  2. In a large skillet (at least 12 inches) or other large oven safe pan or pot, Saute the green onions with a pinch of salt and pepper in 2 tbsp of olive oil on medium high heat for about 2 minutes.
  3. Add the brussels sprouts and continue to saute for another 2 minutes or so.
  4. Add the flour and stir to coat everything. It may appear clumpy, this is ok.
  5. Add the milk, chicken broth, salt, and pepper and stir to incorporate everything and let heat for about 2 minutes.
  6. Add the pasta and stir. and let heat until it begins to slowly boil. Take off the heat.
  7. Add the cheeses and mix thoroughly so it begins to melt and incorporate into the cheese sauce.
  8. Add the frozen chicken and vegetables. Stir thoroughly. Cover the pan with the lid or tin foil and place in oven for 25 minutes.
  9. Uncover and bake for an additional 10 minutes. Then broil for 3-5 minutes until golden brown.
