Ingredients
  • olive oil
  • 1/2 onion diced
  • 1 clove garlic diced
  • 1 cup mushrooms chopped
  • Marsala wine
  • 1-2 lbs leftover ham, chicken or turkey cubed
  • 1 can chicken broth
  • 2 tbsp butter
  • 1 tbsp My Leaning Tower Italian Blend or use following 4 spices: equal mix of dry minced garlic, minced onion, basil and a pinch of red pepper flakes
  • 1/2 tsp ground black pepper
  • 1/2 tsp salt
  • 1/2 lb Penne pasta
  • 2 tbsp Parmesan cheese
  • 2 cups broccoli chopped
  • 1 tbsp flour
  • 2 sprigs parsley fresh, diced

Instructions
  1. In a semi-deep, coverable frying pan, sauté onion and garlic in olive oil with a pinch of salt and pepper for about 1-2 minutes. Slowly add enough Marsala wine to cover bottom of pan. Add cubes of meat and mushrooms and sauté for another minute.
  2. In same pan, add chicken broth, ¼ cup Marsala wine, butter, My Leaning Tower Italian Blend (or substitute spices), ground black pepper and salt. Bring to a slow boil, then lower heat to medium-low to simmer.
  3. Meanwhile, cook pasta ¾ of the way done. Drain and coat with olive oil so it doesn’t stick and set aside while you finish the sauce.
  4. When pasta has been set aside, add broccoli, parmesan cheese and flour to thicken sauce. Stir until thoroughly mixed and most of the lumps are smooth. Add pasta, mix thoroughly and cover. Let sit for another 3 minutes or so. Top with parsley and serve.
