Ingredients
  • 2 tbsp butter
  • 1/2 onion diced
  • 8 oz. can of quartered artichokes
  • 5 eggs beaten
  • 1/4 cup buttermilk
  • 1/4 cup milk
  • 1 tbsp Spank It Kopita Grecian Blend or create a blend of an equal mix of dry minced garlic, oregano, dill, and a pinch of coriander
  • 3 tbsp fresh herbs (Dill, Taragon, Thyme, Rosemary, etc) chopped (use your favorite fresh herbs)
  • salt
  • ground black pepper
  • 1 lb shrimp peeled, detailed and de-veined (if frozen, defrost)
  • 1/4 cup gruyere cheese freshly shredded

Instructions
  1. Saute the onion and artichoke in the butter for with a pinch of salt and pepper on medium heat for about 2 minutes until onions become translucent. Then set aside to allow to cool a bit.
  2. In a large mixing bowl, beat the eggs and add the buttermilk and milk and mix thoroughly.
  3. Add the Spank It Kopita Grecian blend or substitute spices, herbs, pinch of salt and pepper, shrimp, and gruyere cheese and mix thoroughly. Cover and set aside in refrigerator.
  4. When onion and artichoke have come to room temperature, add them to the egg mixture and thoroughly combine. You can leave the mixture to marinate overnight if you like, or make right away. I do find the shrimp are more tender if you allow them to marinate in the egg mixture for at least an hour though.
  5. Preheat oven to 300 degrees
  6. Transfer mixture to a 9x9 greased baking tray and place in oven for 20 minutes. Make sure the center is cooked through. If it's still loose cook for another 5 minutes.
  7. Let sit for 5 minutes before serving and lightly salt if necessary.
