Horseradish & Cheddar Tuna & Rice Casserole

I looked in my fridge and had a jar of horseradish, some cheese and some leftover rice. What the hell is a kitchen [email protected] to do with that crap?  Add some tuna and frozen veggies and voila, you have yourself an amazing casserole!

Ingredients
  • 2 cups cooked rice cool or warm, but not hot
  • 2 5 oz cans Tuna drained thoroughly
  • 2 tbsp prepared white horseradish find in the refrigerated aisle
  • 1/4 cup light mayonnaise
  • 2 tbsp Dijon mustard
  • 1 cup Cheddar cheese freshly shredded
  • 1/4 cup Parmesan cheese freshly shredded, but can use grated
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 1 tbsp My Leaning Tower Italian Blend or create a blend of equal parts basil, dry minced garlic, parsley flakes with a pinch of red pepper flakes.
  • 1/4 sweet onion diced fine
  • 2 cups frozen mixed vegetables defrosted, I used carrots, corn, greenbeans and brocoli
  • breadcrumbs

Instructions
  1. Preheat oven to 350 degrees
  2. Mix all of the ingredients except for the breadcrumbs in a bowl thoroughly.
  3. Grease a casserole dish and place the rice mixture in. Top with breadcrumbs and spritz with a little spray oil (I like the olive oil).
  4. Bake for 25 minutes.
  5. Broil for another 3-5 minutes until browned.
  6. Let sit for 5 minutes and then serve.
