  • 4 Yukon potatoes
  • 4 cloves garlic
  • 1 tbsp butter
  • 1/4 cup horseradish mustard
  • 2-3 tbsp sour cream
  • 1/2 tsp salt
  • 1 pinch ground black pepper

  • 1/2 tsp salt

Instructions
  1. Cut the Yukon potatoes into quarters (you can take the skin off if you prefer) and boil them for about 10-15 minutes until tender to a fork.
  2. Meanwhile, coat the garlic cloves in olive oil and roast in the toaster oven or in a regular oven at 350 degrees for about 3-5 minutes until they brown. Set aside.
  3. When potatoes are done, drain and combine them with the garlic, butter, mustard, sour cream, salt and pepper and mash with a masher until smooth. If they are too dry for your liking, add more sour cream and mustard in equal parts. Salt to taste.
