Ingredients
  • 2 tbsp butter
  • 1/4 onion chopped
  • 1/4 cup flour
  • 2 cups milk
  • 1-2 tbsp My Leaning Tower Italian Blend (or your own italian spices - garlic, basil, red pepper flakes,etc)
  • 8 oz Ricotta cheese
  • 1/2 cup freshly shredded Parmesan cheese
  • 1/2 cup freshly shredded Fontina cheese
  • salt
  • 1 cup frozen spinach
  • 1/2 lb Penne, Ziti, Rigatoni or Corkscrew pasta You can also use leftover pasta here. If there is any sauce left on it, don't worry. This recipe is complementary to most Italian sauces, even tomato sauce.
  • 1 Roma tomato diced
  • 1 chicken breast diced
  • juice of ½ lemon
  • breadcrumbs

Instructions
  1. In a pot, melt the butter and then add the onions. Sauté onion for about a minute.
  2. Add the flour. Stir for about a minute until it clumps.
  3. Add the milk and stir.
  4. Bring heat up to medium high and bring to a rolling boil. When it starts to boil, lower the heat to medium low and it will thicken.
  5. Add the My Leaning Tower Italian Blend (or your own Italian spices), Ricotta, Parmesan, Fontina and Cream Cheese, and stir until the cheeses melt and become incorporated. At this point, carefully taste and add salt as needed.
  6. Add spinach and stir. Cover and take off heat to cool. If you are using raw pasta, prepare it as the sauce cools and thickens.
  7. Preheat oven to 350 degrees.
  8. Prepare the pasta as directed. Once it is done, or if you are using leftover pasta, place pasta in a large bowl and add the cheese mixture, tomato, chicken breast and lemon juice. Mix thoroughly.
  9. Transfer the pasta mixture to a greased baking pan. Cover with some breadcrumbs and bake in oven for about 30 minutes. Broil for 3-5 minutes until top becomes golden brown.
