In a deep, coverable pan, sauté onion and garlic in about 1-2 tbsp of olive oil with a pinch of salt and pepper until onions become translucent.
Add tomato, yellow pepper and turkey sausage and brown (approximately one minute or so).
Add rice and sauté until rice becomes slightly translucent (another minute or so).
Add wine, water, and about 3 tbsp of red wine vinegar with another pinch of salt and pepper. Mix thoroughly and bring to a boil. Cover tightly and let simmer until most of the liquid has been absorbed by rice (between 18 and 20 minutes). Make sure to test that the rice is tender. If it is still hard, add a little more water and stir for a minute or two.
Add sage, frozen peas and cheddar cheese and stir until the cheese has melted and peas have defrosted. Turn off heat and let sit for about 2 minutes. Give one final stir and fluff. Salt and pepper to taste and serve it, [email protected]!
