  • 3 cloves garlic chopped
  • 3 tomatoes diced
  • 1/2 onion diced
  • 1 carrot diced
  • 2 Jalapeño peppers or Serrano Peppers seeded and diced
  • 4 tbsp red wine vinegar
  • ground black pepper
  • salt
  • paprika
  • 1/4 cup orange juice
  • 1/4 cup pineapple juice
  • 2 cans tomato paste
  • 1 lime
  • 1 cup corn frozen cut
  • 1/2 cup cilantro chopped
  • chili powder
  • oregano
  • cumin
  • shredded Cheddar cheese
  • garlic powder
  • soft corn tortillas

Instructions
    SAUCE Preparation:
    1. In a semi deep, coverable, frying pan, sauté garlic, onion and tomatoes with enough olive oil to coat and a sprinkle of salt for about a minute or until onions become translucent. Add ¼ tsp of cumin, ¼ tsp of paprika, ¼ tsp of chili powder and a little ground black pepper and sauté for another 30 seconds. Add vinegar, carrots, jalapeño or Serrano peppers, and sauté for another 30 seconds. Add ground meat and sauté for another minute until browned. Bring heat to medium and add orange and pineapple juice and stir thoroughly. Add tomato paste and stir till it loosens a bit. When it becomes a sauce-like consistency, add 1 tsp salt, 1 tbsp of cumin, 1 tbsp chili powder, 1 tbsp of garlic powder, ½ tsp of oregano, 1 tsp of paprika, juice of 1 lime, cilantro, and ground black pepper to taste. Mix thoroughly and raise heat to high. Wait until sauce starts to bubble, stir, and then bring to a simmer. Simmer for about 35 minutes. Add frozen corn and let sit for 1 minute.
    LASAGNA Preparation:
    1. Grease a semi-deep baking pan with olive oil on all sides. Put one layer of the corn tortilla on the bottom of the pan, followed by a layer of sauce, and then a layer of cheddar cheese. Repeat this step twice, so you have three layers of tortilla, sauce and cheese, making sure the last layer put down is the cheese. Sprinkle some garlic powder, paprika, parsley flakes, and pepper on the top, and bake for 20 minutes at 350 degrees.
