Ingredients
  • olive oil
  • 1/2 onion diced
  • 3 cloves garlic diced
  • 3 Roma tomatoes or plum, diced
  • 1 tsp My Leaning Tower Italian Blend or create a blend of equal parts basil, dry minced garlic, parsley flakes with a pinch of red pepper flakes.
  • 1 cup white wine
  • 1 cup chicken broth
  • 2 pats butter
  • 3-4 strips bacon diced
  • ground black pepper
  • flour
  • 1 lb linguine
  • Parmesan cheese
  • 2-3 sprigs parsley or 1/2 tsp Parsley Flakes
  • salt

Instructions
  1. In a coverable, semi deep frying pan, sauté garlic and onion in 1-2 tbsp of olive oil with a dash of salt and pepper at medium high heat for 1-2 minutes until the onions become translucent.
  2. Add tomatoes and bacon and 1 tsp of My Leaning Tower Italian Blend or substitute spices and continue to sauté for another minute or so. Cover pan, lower heat to Medium and let sit for about 5 minutes until tomatoes start to get tender. Uncover and begin to squish tomatoes with the back of a spoon.
  3. Add cup of white wine, cup of chicken broth, 1 tbsp of butter, ½ tsp pepper, stir and cover. Let simmer for about 10 minutes or so. Begin to boil the water for linguine while this simmers.
  4. After 10 minutes, add 2 tbsp of flour and stir to get most of the lumps out. Don’t worry about all the lumps, just get the big ones, the other ones will work their way out naturally. Cover and simmer for another 15-20 minutes while you finish making the pasta. Make sure to stir it occasionally so it doesn’t stick to bottom of pan.
  5. Prepare linguine according to directions. When drained, add pasta and parsley directly to sauce and toss for a minute or so. Salt to taste if necessary, but remember, bacon and chicken broth both have salt, so taste before adding any.
