Lime Chili Cod Cakes with Vegetarian Chili

Ingredients
  • 8 oz cod fillets patted dry with a paper towel
  • 2 green onions
  • 1/2 cup bread crumbs
  • 1-2 tbsp South of My Border Mexican Blend or equal mix of cumin, chili powder, paprika, oregano
  • 2 tbsp light mayonnaise
  • 2 tbsp flour
  • juice of 1 lime
  • 1/2 tsp salt (Only if you are using your own spice blend- If you are using South of My Border it is not needed)

  • 8 oz cod fillets patted dry with a paper towel
  • 2 green onions
  • 1/2 cup bread crumbs
  • 1-2 tbsp South of My Border Mexican Blend or equal mix of cumin, chili powder, paprika, oregano
  • 2 tbsp light mayonnaise
  • 2 tbsp flour
  • juice of 1 lime
  • 1/2 tsp salt (Only if you are using your own spice blend- If you are using South of My Border it is not needed)

Instructions
  1. Place the cod fillets and the green onions in a food processor and pulse for about 15 seconds- just enough to break them all apart and incorporate the green onions. Place the fish/onion mixture in a bowl and add the bread crumbs, South of My Border Mexican Blend or spice mix you prepared, mayonnaise, flour, lime juice and salt. Mix thoroughly, cover and set aside in the refrigerator for about a half hour.
  2. Form them into small cakes about the size of the palm of your hand.
  3. You can either Pan-Roast the cakes or bake and broil them
Pan Roasting
  1. Preheat oven to 375 degrees. Heat olive oil or vegetable oil in an oven-safe frying pan. When oil is hot (test by placing a morsel of the fish cake mixture into oil, if it bubbles immediately, it is hot enough) place cakes in pan and let sit on both sides for 1-2 minutes so that they are browned all over. Once the cakes are browned on all sides, place in oven for an additional 10 minutes. Take out of oven and let cool for about 10 minutes. I find that if you let cool completely and then re heat, they are firmer and tastier, so if you have time, let them cool completely, reheat and serve.
Roasting
  1. Preheat oven to 375 degrees. Place cakes on a greased baking sheet. Spray or brush with cooking oil so they are coated. Place in oven for 20 minutes. Flip cakes and bake for an additional 10 minutes and then broil for 2 additional minutes to get them crisp. Take from oven and let sit for about 10 minutes. I find that if you let cool completely and then re heat, they are firmer and tastier, so if you have time, let them cool completely, reheat and serve.
