Ingredients
  • 1 lb sweet potatoes peeled and quartered
  • 4 tbsp butter
  • 2 tbsp heavy cream
  • 1/4 cup flour
  • 1/4 can pineapple tidbits drained
  • 1/2 tbsp Maple syrup
  • 1 1/2 tbsp ground ginger Fresh
  • 1 tsp allspice
  • 1 egg beaten
  • mini marshmallows
  • 1/2 cup butter melted

  • 1 lb sweet potatoes peeled and quartered

  • 1/2 tbsp Maple syrup
  • 1 1/2 tbsp ground ginger Fresh
  • 1 tsp allspice
  • 1 egg beaten
  • mini marshmallows
  • 1/2 cup butter melted

Instructions
  1. In a pot, boil the sweet potatoes until they are tender (about 15 minutes or so). While they are still hot, drain thoroughly and place in a bowl with the butter, heavy cream, flour, pineapple, maple syrup, ginger, and all spice. Using a masher or back of a large fork, thoroughly mash until all of the ingredients are incorporated.
  2. Once it is incorporated, add the beaten egg and mix thoroughly. Place the mixture in a greased baking pan, cover and let refrigerate for about 15- 20 minutes.
  3. Meanwhile, preheat the oven to 350 degrees.
  4. Take pan from the refrigerator and sprinkle the top with marshmallows. Brush the marshmallows with melted butter and bake for 35 minutes. Broil for 3 minutes to get golden brown.
  5. Let sit for 10 minutes before serving.
