Ingredients
  • 4 chicken thighs
  • 3 tbsp My Leaning Tower Italian Blend or create an equal blend of the following: basil, dry minced garlic, parsley flakes with a pinch of red pepper flakes.
  • olive oil
  • 3 cloves garlic sliced
  • 4 potatoes cut into wedges
  • salt
  • ground pepper
  • 1/2 cup chicken broth
  • 1/2 cup Marsala wine
  • 1 tbsp butter

  • 4 chicken thighs
  • 3 tbsp My Leaning Tower Italian Blend or create an equal blend of the following: basil, dry minced garlic, parsley flakes with a pinch of red pepper flakes.

  • 1/2 cup chicken broth
  • 1/2 cup Marsala wine
  • 1 tbsp butter

Instructions
  1. Preheat the oven to 350 degrees.
  2. Season the chicken thighs generously with My Leaning Tower Italian Blend or blend you made and a pinch of salt and pepper.
  3. In a large, deep oven safe skillet (5 qt. or big enough to hold 4 chicken thighs and 4 cut potatoes or two oven safe skillets if you need), sauté the garlic in olive oil over medium high heat for about 1 minute. Add the potato wedges and season with a pinch of salt and pepper and generously (about a tbsp) with the My Leaning Tower Italian Blend or substitute blend. Continue to sauté for about 2 minutes until potatoes begin to brown.
  4. Place the chicken thighs skin side down in the pan and let brown for about 2 minutes, and then flip and let brown for an additional 2 minutes. Add the chicken broth, Marsala wine, butter and a ½ tsp of My Leaning Italian Blend and let the liquid come to a simmer. Place in the oven for about 45 minutes until the chicken is cooked through. Broil chicken and potatoes for about 3-5 minutes to get a nice crispy finish for both.
  5. Serve the chicken and potatoes with the sauce from the pan. Can serve with roasted squash, or even throw some Brussels sprouts, broccoli or zucchini in with the potatoes if you desire.
