Ingredients
  • Leftover Beef, Chicken, Turkey or Lamb
  • olive oil
  • 1/2 onion diced
  • green, red or Jalapeno pepper diced
  • 2 tomatoes diced
  • 1 tbsp South of My Border Mexican Blend or equal mix of cumin, chili powder, paprika, oregano, dry minced garlic
  • 1 lb leftover meat
  • 2 tbsp tomato sauce or salsa
  • flour tortillas
  • Mexican cheese queso fresco, cheddar, monterey jack, etc.
  • Chili
  • leftover or fresh chili see my chili recipes below

Instructions
If Using Leftover Meats
  1. in a large, pan, saute onion, peppers and tomatoes in about a tbsp of olive oil on medium high heat for about a minute until onions become translucent.
  2. Add South of My Border Mexican Blend of substitute spices, leftover meats, tomato sauce or salsa and saute for another 3-5 minutes until everything is coated.
  3. Place mixture onto a tortilla brushed with olive oil and add Mexican cheeses. Fold tortilla and grill in a pan until cheese is melted or brush more olive oil onto tortilla and bake in oven at 325 degrees for 10-15 minutes until cheese is melted. Can turn up heat to 450 for 3 minutes to create a golden brown, crispy tortilla.
If Using Chili
  1. You can just place the leftover (or fresh) chili, on an olive oil brushed tortilla. Sprinkle with some Mexican cheeses, and then either fold and then grill with some olive oil in a pan until cheese melts or brush more olive oil onto tortilla and bake in oven at 325 degrees for 10-15 minutes until cheese is melted. Can turn up heat to 450 for 3 minutes to create a golden brown, crispy tortilla.
