Ingredients
  • 1 cup melted butter
  • 1/2 cup sugar
  • 4 eggs
  • 1 cup corn
  • 2 Jalapeño peppers diced
  • 1/4 onion diced
  • 1/4 cup spearmint fresh
  • 1/4 cup cilantro
  • 1/4 cup shredded Cheddar cheese
  • 1 cup flour
  • 1 cup Cornmeal
  • 4 tsp baking powder
  • 1/4 tsp salt

  • 1/4 cup shredded Cheddar cheese
  • 1 cup flour
  • 1 cup Cornmeal
  • 4 tsp baking powder
  • 1/4 tsp salt

Instructions
  1. Preheat oven to 350 degrees and grease a 9x13 inch baking pan.
  2. In a large bowl, beat together butter and sugar. Beat in eggs one at a time. Blend in corn, chilies, onion, cilantro, mint and cheddar cheese.
  3. In a separate bowl, stir together flour, cornmeal, baking powder and salt.
  4. Add flour mixture to corn mixture; stir until smooth.
  5. Pour batter into prepared pan. Bake in preheated oven for 1 hour, until a toothpick inserted into center of the pan comes out clean.
