Ingredients
  • 3 Russet potatoes large
  • 1/2 onion chopped
  • 4 cloves garlic minced
  • 1/2 cup Cheddar cheese
  • 1-2 Jalapeño peppers diced
  • 1/4 cup corn whole
  • 1 tbsp South of My Border Mexican Blend or equal mix of cumin, chili powder, paprika, oregano, dry minced garlic
  • salt
  • 1-2 tbsp sour cream
  • 1/4 cup Mexican beer
  • 1/4 cup red wine vinegar
  • 1 egg
  • flour
  • bread crumbs
  • corn oil
  • Mint Jalapeño Sour Cream:
  • 3 sprigs mint fresh
  • 2 cloves garlic
  • 1/4 Jalapeño pepper
  • 3 tbsp sour cream

Instructions
  1. Boil potatoes (can peel if desired, but not necessary) until tender to the fork. Drain thoroughly .
  2. In a bowl combine potatoes, onion, garlic, cheddar, jalapeño, corn, South of My Border Mexican Blend or substitute spices, sour cream, 1/2 tsp salt, beer, vinegar and ¼ cup flour and mash thoroughly until all mixed. Let cool. Form balls and set aside.
  3. Heat oil in a deep pot (about half way up). To test if oil is hot enough, take a small amount of potato and place in the pot. If intense bubbles form around the potato, oil is ready.
  4. Lay out some flour and bread crumbs in two separate plates. Beat egg in a bowl and dredge balls in flour, then egg then bread crumbs. Place balls carefully into pot for 2-3 minutes each until they become golden brown, and set on to paper towels.
  5. PUT A DOLLOP OF SOUR CREAM ON EACH POTATO SPHERE AND SERVE IT WITH YOUR ENTRÉE, [email protected]!
