Ingredients
  • 2-3 potatoes large, quartered
  • 1/4 onion chopped
  • 2 stalks celery chopped
  • 2 carrots diced
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp salt
  • tsp ground black pepper
  • 1 sprigs parsley chopped
  • 1 tbsp My Leaning Tower Italian Blend OR following 3 spices:
  • 1/2 tsp basil
  • 1/2 tsp dry minced garlic
  • Pinch red pepper flakes

  • 2-3 potatoes large, quartered
  • 1/4 onion chopped
  • 2 stalks celery chopped
  • 2 carrots diced
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp salt
  • tsp ground black pepper
  • 1 sprigs parsley chopped

  • 1/2 tsp basil
  • 1/2 tsp dry minced garlic

Instructions
  1. In a pot, place 2-3 quartered potatoes and boil for approximately 20 minutes or until you can drive a fork in them easily. When they are done, put them aside until they are cool. It is important to cool them or they will turn into mashed potatoes when you mix the ingredients.
  2. In a large bowl combine onion, celery stalks, carrots, olive oil, vinegar, spices, salt, ground black pepper, parsley, and cooled potatoes. Using a large fork, chop potatoes and then mix thoroughly making sure chunks of potato are preserved and not mashed. Salt to taste.
