Ingredients
  • For the pulled pork
  • 2 lb country style pork ribs
  • 1 1/2 tbsp Smoky Pole BBQ Blend or create a blend of an equal mix of dry dry minced garlic, cumin, chili powder, smoked paprika, onion powder, dry mustard seed
  • 1/2 jar orange marmelade
  • 1 tbsp olive oil
  • 1 tbsp Worcestershire sauce
  • 1/3 cup Bourbon
  • 1/2 tsp salt
  • vegetable oil
  • For the gravy
  • 2 tbsp butter
  • 1/4 onion diced fine
  • 1 3/4 cups milk
  • 1/4 cup Bourbon
  • 1/2 tsp Smoky Pole BBQ Blend or create a blend of an equal mix of dry dry minced garlic, cumin, chili powder, smoked paprika, onion powder, dry mustard seed

  • For the sandwiches
  • English Muffins
  • 5 eggs
  • 1/4 cup milk
  • salt
  • ground black pepper
  • 2 tbsp butter

  • 1/4 cup milk

Instructions
    For the pulled pork
    1. Mix the Smoky Pole BBQ Blend or substitute spices, orange marmalade, Worcestershire sauce, bourbon and salt and mix thoroughly. Add the pork and marinate in the refrigerator for at least 2 hours. Overnight is preferable.
    2. Preheat oven to 300 degrees.
    3. In a large, deep, coverable pan, heat vegetable oil and sear meat on all sides. Place seared meat in baking pan, pour marinade and excess oil from pan on top of meat so that it runs about halfway up and cover . Place in oven for about 2.5-3 hours. Remove from oven and let sit for about 15 minutes.
    For the gravy
    1. Start making the gravy in the last hour of cooking the pork.
    2. In a medium pot, melt butter on medium heat. Raise the heat to medium high and add onion and sauté for about a minute with a pinch of salt and pepper.
    3. Add flour and stir for about 30 seconds or so. It will “clump” and form a roux.
    4. Add milk, smoky Pole BBQ Blend or substitute spices, salt, and pepper and bring to a slow boil while stirring.
    5. When it starts to simmer, add the bourbon and lower heat to low and let simmer for about 10 minutes to burn off alcohol.
    6. Cover, and let simmer on low heat while you prepare the bread and eggs for the sandwiches.
    For the sandwiches
    1. Begin to prepare sandwiches in the last half hour of cooking the pork and after the gravy is simmering.
    2. Place sliced English muffins in a large baking tray and toast at 275 degrees until they are firm and browned on the edges. You can brush on butter or toast them plain. Once they are toasted set aside.
    3. Whisk together the milk, eggs, salt and pepper.
    4. Melt butter in a large frying pan on medium heat. Place egg mixture in pan and let sit for about 5 minutes. You can “push in the sides” to provide for an even cook, but do not scramble the egg. You are going to want a sheet of ‘fried egg”.
    5. Once it is cooked through, cut with spatula into smaller pieces (a little smaller than an English muffin and carefully take out of pan.)
    6. Place a portion of fried egg on English muffin and top with pulled pork.
    7. Top sandwiches with gravy and serve with extra gravy on the side.
