Ingredients
  • 1 lb cranberries fresh or frozen
  • 1 cup sugar
  • 1/3 cup water
  • 1/3 cup orange juice
  • 1/2 stalk of lemongrass cut into about 4 pieces (about 2 inches long or so)
  • zest of 1/2 orange
  • 1/2 tsp fresh ground ginger
  • 1/2 tsp cinnamon

  • 1/3 cup water
  • 1/3 cup orange juice
  • 1/2 stalk of lemongrass cut into about 4 pieces (about 2 inches long or so)

Instructions
  1. In a medium pot, place cranberries, sugar, water and orange juice, lemongrass stalks and stir. Bring to a boil over medium-high heat. Add orange zest, ginger and cinnamon, lower heat to medium-low and stir. Cover and let simmer for about 15 minutes, stirring occasionally until cranberries have become “sauce-like.” The consistency should be semi-thick. If it is too thin, uncover and continue to simmer until the right consistency is achieved. Take out lemongrass before serving.
