Ingredients
  • olive oil
  • 3 cloves garlic sliced
  • 1/2 papaya peeled, seeded and cubed
  • 2 tbsp Worcestershire sauce
  • 1 tbsp Jamaican Me Jerky Caribbean Blend equal mix of Thyme, Pepper, All Spice, Paprika and a pinch of Cinnamon and Cayenne Pepper
  • 1/3 cup water
  • 1/3 cup Bourbon
  • 1/2 tsp salt
  • 1 tbsp butter
  • 2-3 lbs chicken breasts or legs

  • 1/2 tsp salt
  • 1 tbsp butter
  • 2-3 lbs chicken breasts or legs

Instructions
  1. Heat about 1 tbsp of olive oil in a coverable frying pan and sauté the garlic and papaya cubes. Add vinegar, Worcestershire sauce, and Jamaican me Jerky Caribbean Blend or substitute spices, mix thoroughly, cover, lower heat to medium low and let simmer for about 5 minutes. Add the water, bourbon, salt and butter , stir and leave uncovered and let simmer for another 10 minutes until the bourbon has reduced by half. Let cool and then place in a food processor and puree until smooth.
  2. Once cooled, marinate the chicken in papaya puree for at least 3 hours.
For Chicken Breasts
  1. Preheat oven to 400 degrees
  2. Place breasts on a baking tray and cook for 10 minutes and then lower heat to 325 Degrees and cook for an additional 35-40 minutes. Baste with chicken juice/marinade mix the last 5 minutes of cooking
For Chicken Legs & Thighs
  1. Preheat oven to 425 degrees
  2. Place chicken in a baking tray and pour the papaya marinade over the top. Bake for 15 minutes and then lower heat to 350 degrees and cook an additional 35-40 minutes. Baste with chicken juice/marinade the last 5 minutes of cooking. Broil for 3-5 minutes to make crispy.
