Ingredients
  • 3 tbsp apple cider vinegar
  • 2 tbsp olive oil
  • 1 1/2 tsp brown sugar
  • 1/2 tsp salt
  • 1 pinch ground black pepper
  • 1/2 head green cabbage shredded
  • 1/2 lb carrots shredded
  • 1/2 cup roasted red peppers sliced
  • 1/4 Vidalia onion diced fine
  • 1-2 cups pineapple diced
  • 2 sprigs cilantro fresh, chopped
  • 1/2 tbsp Jamaican Me Jerky Caribbean Blend OR following 5 spices:
  • 1/2 tsp all spice
  • 1/2 tsp thyme
  • 1 pinch white pepper
  • 1 pinch cinnamon
  • 1 pinch Cayenne pepper

Instructions
  1. For the dressing: Place vinegar, olive oil, brown sugar, Jamaican Me Jerky Caribbean Blend (or other 5 spices listed), salt, and ground black pepper in a bowl and mix thoroughly. Cover and refrigerate for at least an hour.
  2. Place cabbage, carrots, roasted red pepper, onion, and pineapple in a bowl with the dressing and mix thoroughly. Top with fresh cilantro and mix to incorporate. Let marinate for at least an hour. If you desire more dressing, make more.
