Ingredients
  • 2 strips bacon diced
  • 1/2 onion sliced
  • 3 cloves garlic diced
  • 1-2 lbs collard greens cut into thirds
  • 1 1/2 cups port wine
  • 1/2 cup water
  • 1 beef bouillon cube

Instructions
  1. If you prefer, you can strip away the stems of the collard greens, however, I like them and keep them on. cut them into 1 inch pieces if you prefer.
  2. Place the diced bacon in a large, coverable pot and heat on medium heat for about 5 minutes until the bacon fat is rendered.
  3. Saute onion and garlic in the bacon fat for about 3 minutes until onion is translucent.
  4. Add the collard greens, port wine, water and bouillon cube and cover.
  5. Once collard greens have wilted a little, uncover and stir to make sure bouillon cube is able to dissolve.
  6. Re-cover and bring to a simmer for 45-50 minutes.
  7. Serve
