Ingredients
  • 2 potatoes peeled
  • 1 cup broccoli frozen, thawed and drained.
  • 2 slices American cheese
  • 1 onion chopped in half with ends removed
  • 2 cloves garlic
  • 1 egg
  • 3 sheets egg matzo crushed
  • ground black pepper
  • salt
  • olive oil

  • 1 cup broccoli frozen, thawed and drained.
  • 2 slices American cheese

  • 3 sheets egg matzo crushed

Instructions
  1. Preheat oven to 350 degrees
  2. Using the largest holes in a cowbell grater, shred potatoes into a strainer, and squeeze out excess moisture with a paper towel. Sprinkle salt on top to prevent from browning, cover and set aside.
  3. Place broccoli, onion, garlic, cheese, matzo, 1 tsp pepper, 1 tsp salt and tbsp of olive oil into a food processor and pulse together.
  4. Place the broccoli mixture and the potato mixture into a bowl, add the egg and mix together thoroughly.
  5. Pour mixture into a pre-greased tinfoil cake pan,. Cook for 45 minutes to an hour at 350 degrees until center is firm. Broil for 2 minutes to get crispy.
