Ingredients
  • 2 potatoes peeled
  • 1 cup broccoli frozen, thawed and drained.
  • 2 slices American cheese
  • 1 onion chopped in half with ends removed
  • 2 cloves garlic
  • ground black pepper
  • salt
  • olive oil
  • 1 egg
  • 1/4 cup flour

  • 1/4 cup flour

Instructions
  1. Preheat oven to 350 degrees
  2. Using the largest holes in a cowbell grater, shred the potatoes into a strainer and squeeze excess moisture out with a paper towel. Sprinkle with salt, cover and set aside.
  3. Place broccoli, onion, garlic, cheese, 1 tsp pepper, 1 tsp salt and tbsp of olive oil into a food processor and pulse together.
  4. Place the potatoes and the broccoli mixture into a bowl and add the flour and egg. Mix together thoroughly.
  5. Pour mixture into a pre-greased tinfoil cake pan,. Cook for 45 minutes to an hour at 350 degrees until center is firm. Broil for 2 minutes to get crispy.
