Ingredients
  • 2 Yukon Gold potatoes
  • salt
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1/2 onion diced
  • ground black pepper
  • 4 eggs lightly beaten
  • 1/4 cup half and half, cream or milk
  • 1 tsp dried basil can use fresh if you have
  • 1 tbsp My Leaning Tower Blend or create a blend of equal parts basil, dry minced garlic, parsley flakes with a pinch of red pepper flakes.

Instructions
  1. Shred the potatoes using the largest setting of a cowbell grater into a strainer and then push down with a paper towel to remove as much excess moisture as you can. Then sprinkle the potatoes with some salt to prevent browning. Set aside.
  2. In an oven safe pan, heat olive oil and butter on medium high heat until butter melts. Then lower heat to medium and saute onions for about 2 minutes with a pinch of salt and pepper until translucent
  3. lightly beat the eggs with half & half, cream or milk, dried basil, and My Leaning Tower Italian Blend or substitute spices and set aside.
  4. Preheat oven to "broil"
  5. Add the potatoes and sautee for about 5 minutes until a bit browned.
  6. Add the egg mixture and incorporate everything so it is consistent and let "set" in pan for about 30 seconds until egg starts to cook a little.
  7. Transfer the pan to oven and let bake until slightly browned and fluffy. This will take about 3-4 minutes, so watch so it doesn't burn.
  8. Serve immediately. Sprinkle a little salt on top if needed.
