Raspberry Almond Frozen Custard
You really need an ice cream-maker for this, but it may be possible to freeze the custard and then allow it to melt a little before you serve it. While it melts, you can stir it thoroughly to make it soft.

Ingredients
  • 3 egg yolks
  • 2 eggs
  • 1/2 cup sugar
  • 1 1/2 cups milk
  • 1 1/2 cups heavy cream
  • 1 tsp vanilla extract
  • 1 tsp almond extract
  • 3 tbsp raspberry jam heaping
  • chocolate chip cookies

Instructions
  1. Combine the milk and the cream in a pot with the vanilla and almond extract. Heat on medium heat until it comes to a slow boil.
  2. Meanwhile, in a bowl combine the eggs and egg yolks with the sugar. With an electric hand mixer, blend the eggs and sugar on medium speed until the mix becomes pale yellow (about 2-3 minutes.)
  3. When the milk and cream mixture comes to a slow boil, pour approximately 1 cup of it into the egg and use the mixer to blend thoroughly. Then pour the rest of the egg into the pot. Stir and mix thoroughly. Add the raspberry jam and stir thoroughly until jam has melted and mixed in thoroughly.
  4. Pour the mixture into a bowl and place plastic wrap over the bowl so that it is touching the mix so there is no air between mix and plastic wrap. Place in fridge and let it cool completely. I like to leave it in the refrigerator overnight.
  5. When it is cooled, place the custard into your ice cream maker and turn on. It should be ready in 20-30 minutes.
  6. You really need an ice-cream maker to make this properly, but if you don’t have an ice cream maker, place bowl of custard in the freezer and let freeze completely. Take it out about an hour or two before you serve it and let melt. As it melts, stir in the melted portion with the frozen portion until it becomes soft.
