Ingredients
  • For the Salad:
  • 5 beets large, peeled and cut into 1-inch pieces
  • olive oil
  • salt
  • pepper
  • garlic powder
  • 2 small cans mandarin oranges
  • 1/2 Vidalia onion sliced the “long way”
  • 1 cup arugula
  • 1 cup Chinese chow mein noodles
  • For the Dressing:
  • 1/2 tsp sesame oil
  • 1 tbsp olive oil
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 2 tbsp rice vinegar
  • 1 tbsp sesame seeds black
  • 1 tbsp Miso Ho-Nee Asian Blend OR following mix of 4 spices:
  • 1/2 tsp cumin
  • 1/2 tsp white pepper
  • pinch ginger
  • pinch five spice

Instructions
  1. Preheat oven at 350 degrees. In a bowl, coat the beets with about 2 Tbsp of olive oil, 1 tsp salt, ½ tsp each ground black pepper and garlic powder. Place onto a greased baking sheet and bake for about 25-30 minutes until beets are tender. While beets are roasting, prepare the dressing.
  2. Place all dressing ingredients in a bowl and mix thoroughly. Place in refrigerator for at least an hour so ingredients can incorporate.
  3. Take beets from oven, place in a large coverable bowl and place into fridge to cool. Once cooled, drain any excess oil and add the mandarin oranges, onion, and arugula. About 5 minutes before serving, add dressing, noodles, sesame seeds and toss till everything is coated. Serve.
