Ingredients
  • 4 oz salmon fillet
  • 1/2 cup rice cooked and cooled- great for leftover rice as well
  • 1/4 Vidalia onion
  • 2 cloves garlic
  • 1 tbsp olive oil
  • 3-4 stalks asparagus diced or sliced fine
  • 1/4 cup breadcrumbs
  • 1/2 tsp salt
  • 2 tbsp Dijon mustard
  • 1 tbsp mayonnaise
  • 1 tbsp dill dried
  • 1 tbsp flour
  • 1-2 tsp Spank It Kopita Grecian Blend or equal mix of dry minced garlic, oregano, dill, and a pinch of coriander

  • 4 oz salmon fillet
  • 1/2 cup rice cooked and cooled- great for leftover rice as well
  • 1/4 Vidalia onion

Instructions
  1. In a food processor, combine salmon, rice, onion, garlic and olive oil. Process on the lowest setting for about 15 seconds. Just enough to incorporate all of the ingredients and leave some good chunks of salmon.
  2. Place in a bowl and add the asparagus, bread crumbs, salt, Dijon mustard, mayonnaise, dill, flour, and spices. Mix thoroughly and set aside for about 15 minutes.
  3. Form the salmon mixture into “meatball”-sized balls and place on a plate.
  4. You can Pan-Roast or Roast them. See instructions for either method below:
Pan-Roasting
  1. Preheat oven to 375 degrees.
  2. Heat olive oil or vegetable oil in an oven save frying pan. When oil is hot (test by placing a morsel of the ball mixture into oil, if it bubbles immediately, it is hot enough) place balls in pan and let sit on all sides for 1-2 minutes so that they are browned all over.
  3. Once the balls are browned on all sides, place in oven for an additional 10 minutes. Take out of oven and let cool for about 10 minutes. I find that if you let cool completely and then re heat, they are firmer and tastier, so if you have time, let them cool completely, reheat and serve.
Roasting
  1. Preheat oven to 375 degrees.
  2. Place balls on a greased baking sheet. Spray or brush with cooking oil so they are coated. Place in oven for 20 minutes. Flip balls and bake for an additional 10 minutes and then broil for 2 additional minutes to get them crisp. Take from oven and let sit for about 10 minutes. I find that if you let cool completely and then re heat, they are firmer and tastier, so if you have time, let them cool completely, reheat and serve.
