Ingredients
  • 1 tbsp My Leaning Tower Italian Blend or following spices: Equal parts dry basil, dry minced garlic, dry parsley and a pinch of red pepper flakes
  • 1 cup Marsala wine
  • 11/2 cups chicken broth
  • 1 tbsp melted butter
  • olive oil
  • 1/4 onion finely diced
  • 2 cloves garlic finely diced
  • salt
  • ground black pepper
  • 1 cup shrimp raw frozen, de-tailed and de-veined, diced (do not defrost)
  • 3 strips bacon finely diced
  • 1/2 cup Orzo
  • 1/2 cup white rice
  • 1 Roma tomato diced
  • 1/2 cup roasted red peppers finely diced
  • 1 cup freshly shredded white Cheddar
  • 1/2 cup frozen peas

Instructions
  1. Combine My Leaning Tower Italian Blend, or other spices, Marsala wine, chicken broth and melted butter in a measuring cup or bowl and mix thoroughly. Set aside.
  2. In a deep frying pan, sauté onion and garlic in about a tbsp of olive oil with a pinch of salt and pepper for about 1 minute on medium high heat until onions become translucent.
  3. Add bacon and frozen shrimp and continue to sauté for another 2 minutes until bacon is browned.
  4. Add the orzo and rice and saute for another minute or so.
  5. Add the tomatoes and red peppers and saute an additional 2- 3 minutes.
  6. Starting on medium high heat, add one cup of the Marsala/ chicken broth mixture and stir into the rice and orzo until it is mostly absorbed (will be about 3-5 minutes).
  7. Lower heat to medium and add an additional ½ cup of the mixture and continuously stir until it is absorbed.
  8. Lower heat to medium low and add an additional ½ cup of the mixture and stir continuously until it is absorbed.
  9. Add the last of the liquid and stir until it is completely absorbed. Taste to make sure that the rice is tender and not still hard. If it is still hard, add a ¼ cup of water and stir until absorbed.
  10. Add the shredded cheddar cheese and stir until it is melted and incorporated. Add the frozen peas about 2 minutes before serving, stir and incorporate. Salt to taste.
