Ingredients
  • 4 oz shrimp raw, peeled and deveined
  • 4 oz cod fillets
  • 1/2 cup rice cooked and cooled- great for leftover rice
  • 1/2 carrot
  • 1/4 Vidalia onion
  • 2 cloves garlic
  • 1 tbsp olive oil
  • 1/2 yellow squash grated
  • 1/2 cup breadcrumbs
  • 1/2 tsp salt
  • 1/2 tbsp red wine vinegar
  • 1 tbsp mayonnaise
  • 1/4 cup Parmesan cheese grated or freshly shredded
  • 1 tbsp flour
  • 1-2 tsp My Leaning Tower Italian Blend or equal mix of the following:
  • dry minced garlic
  • dry basil
  • dry parsley flakes
  • red pepper flakes

Instructions
  1. In a food processor, combine shrimp cod, rice, carrot, onion, garlic and olive oil. Process on the lowest setting for about 15 seconds. Just enough to incorporate all of the ingredients and leave some good chunks of shrimp and cod.
  2. Place in a bowl and add the squash, breadcrumbs, salt, vinegar, mayonnaise, parmesan cheese , flour, and spices. Mix thoroughly and set aside for about 15 minutes.
  3. Form the cod and shrimp mixture into “meatball”-sized balls and place on a plate.
  4. You can either pan-roast, or roast them. The instructions for both methods are below
Pan Roasting
  1. Preheat oven to 375 degrees. Heat olive oil or vegetable oil in an oven save frying pan. When oil is hot (test by placing a morsel of the ball mixture into oil, if it bubbles immediately, it is hot enough) place balls in pan and let sit on all sides for 1-2 minutes so that they are browned all over.
  2. Once the balls are browned on all sides, place in oven for an additional 10 minutes. Take out of oven and let cool for about 10 minutes. I find that if you let cool completely and then re heat, they are firmer and tastier, so if you have time, let them cool completely, reheat and serve.
Roasting
  1. Preheat oven to 375 degrees. Place balls on a greased baking sheet. Spray or brush with cooking oil so they are coated. Place in oven for 20 minutes. Flip balls and bake for an additional 10 minutes and then broil for 2 additional minutes to get them crisp. Take from oven and let sit for about 10 minutes. I find that if you let cool completely and then re heat, they are firmer and tastier, so if you have time, let them cool completely, reheat and serve.
