Ingredients
  • 1/2 onion diced
  • 2 cloves garlic diced
  • 2 Roma tomatoes diced
  • Spanish Rice-a-Foni
  • 2 cups frozen shrimp thawed and de-tailed
  • 1 cup roasted red peppers diced
  • saffron

Instructions
  1. In a semi-deep frying pan sauté onion, roasted red pepper, tomatoes and garlic in enough olive oil to coat with dash salt and pepper for about a minute until the onions become translucent. Add rice from box of rice-a-foni and sauté for another minute or so until the rice becomes translucent. Add 2 cups of water, contents of half of the Spanish rice seasoning packet, and a pinch of saffron. Stir and bring to a boil. As soon as water begins to boil, turn heat to medium-low, cover, and let simmer for about 10 minutes. Add Shrimp, and re-cover to allow the rest of the water to be absorbed into the rice. Once rice has absorbed all the water, stir for a few minutes
