Ingredients
  • olive oil
  • 1 strip bacon diced
  • 1/2 onion diced
  • 2 Roma tomatoes diced
  • 1-2 tbsp Smoky Pole BBQ Blend or create an equal mix of dry dry minced garlic, cumin, chili powder, smoked paprika, onion powder, dry mustard seed
  • 2 cans Pinto beans rinsed
  • 1/4 cup ketchup
  • 1 tbsp honey
  • 2 tbsp horseradish mustard

  • 1 tbsp honey
  • 2 tbsp horseradish mustard

Instructions
  1. In a coverable pot, sauté bacon and onions in olive oil for about a minute until onions become translucent.
  2. Add tomatoes, and a pinch of the Smoky Pole BBQ Blend or substitute spices, and stir. Cover pot and let sit for about 5 minutes so the tomatoes release their moisture.
  3. Add the beans, ketchup, honey, horseradish mustard and 1-2 tbsp of Smoky Pole BBQ blend, and mix thoroughly. Cover and let cook for about 45 minutes stirring occasionally.
